WHOLE ROAST TURKEY

1. Prep

• Remove turkey from fridge 1 hour before • Pat completely dry • Preheat oven to 180°C

 

2. Seasoning

• Rub with butter or olive oil • Season inside and outside • Salt and pepper 

• Optional herb stuffing 


3. Roasting Tips

• Place breast-side up • Use roasting rack • Add water to roasting pan • Cover with foil • Baste every 45 minutes • Remove foil last hour

Cooking time for the following weights:

4-5kg: 2 - 2.5hrs 

5-6kg: 2.5 - 3hrs

6-7kg: 3 - 3.5hrs

7-8kg: 3.5 - 4hrs

8-9kg: 4 - 4.5hrs

9-10kg: 4.5 - 5hrs 


4. Temperature Check

• For best results use a meat thermometer • Check thickest part of thigh • Target 74°C • Juices should run clear


5. Resting

• Remove from oven • Rest 20-30 minutes • Allows juices to redistribute
