BEEF EYE FILLET ROAST

1. Prep

• Remove fillet from fridge 45 mins before • Preheat oven to 200°C

2. Season

• Brush with olive oil • Sea salt and black pepper

3. Roast

• Sear quickly on all sides in a hot pan • Roast uncovered

Cooking Times (Internal temp: 55-60°C - Medium Rare):

1kg: 30-40 mins 

1.5kg: 45-55 mins 

2kg: 55-65 mins


4. Rest

• Remove from oven • Rest 15-20 mins • Slice and serve
