BEEF RIB EYE ROAST
1. Prep
• Remove roast from fridge 1 hour before • Preheat oven to 180°C
2. Season
• Rub with olive oil • Coarse sea salt
3. Roast
• Sear in hot pan first • Roast uncovered • For best resultys use a meat thermometer • Aim for 50-55°C internal
Cooking time after searing:
1Rib (1kg): 25mins
2 Ribs (2kg): 55mins
3 Ribs (3kg): 1hr 30mins
4 Ribs (4kg): 2hrs
4. Rest
• Remove from oven • Rest 15-20 mins • Slice and serve
