ROAST CHICKEN
1. Prep
• Remove chicken from fridge 30mins before cooking • Preheat oven to 200°C
2. Seasoning
• Generously salt inside cavity • Stuff with: - Lemon halves - Garlic cloves - Fresh thyme sprigs • Rub skin with olive oil • Sprinkle with: - Coarse sea salt - Cracked black pepper - Dried herbs
4. Roasting
• Roast skin side up at 200°C for 1hr and 20mins
6. Resting
• Remove from oven • Rest 15-20 minutes • Carve and serve
