TURKEY BREAST

1. Prep

• Remove from fridge 1 hour before • Pat dry • Preheat oven to 200°C

• Rub with olive oil • Sprinkle with salt and pepper • Optional: Herb rub or butter


2. Roast

• Place in roasting pan • Roast uncovered for 1hr and 10mins • Baste occasionally

• For best results use a meat thermometer • Target 74°C internal temp 

• Juices should run clear


3. Rest

• Remove from oven • Rest 15-20 minutes • Slice and serve
