GLAZED HAM

1. Prep

• Remove ham from fridge 1-2 hours before cooking • Remove skin, leaving fat intact • Score fat in diamond pattern • Preheat oven to 200°C


2. Glaze Ingredients

• 1 cup brown sugar • 1/4 cup honey • 2 tbsp Dijon mustard • 1/4 cup orange juice • Whole cloves


3. Glaze Preparation

• Whisk glaze ingredients together • Warm glaze slightly • Brush first layer on ham • Stud with whole cloves if desired


4. Roasting

• Place ham in roasting pan • Baste every 30 minutes • Add more glaze layers • Uncover for final 30 minutes

Cooking times:

Half Ham 4-5kg: 1hr 

Whole Ham 7-8kg: 2hrs


5. Resting & Serving

• Remove from oven • Rest 20-30 minutes • Serve and slice
